Been a while (well 4 months!) and wish I had my act more together to post some of the stuff I’ve been knocking up, but there you go, better late than never.
I love Mexican food and seem to have an obsession with wraps, so this fish taco of sorts was a double win and an easy snack to throw together.
- Haddock fillet
- The rub: Cumin, Paprika, Cayenne, Oregano
- Spring onion
- Fresh dill and coriander
- White cabbage
- Potato, chopped into thin fries
Sprinkle the rub ingredients over the fish fillets with the lime and some crushed garlic and leave to ‘meld’.
Chop the tomatoes, spring onion and coriander and combine, adding some seasoning and lime. At the same time, shred the cabbage and set aside.
Heat some oil in two fry pans, chucking the potato in one and laying the fish in the other, skin side down. Check the fish and chips, turning everything when they colour.
Remove from the heat, put the chips on some kitchen towel and pull the skin away from the fish and discard.
Now to put it all together… Break the fish into big chunks and place in the centre of a wrap. Add dill, the salsa and cabbage on top then roll, wrap, enjoy!
P.s. The fish tastes best with a decent zing of acidity so have some extra lime handy.
P.p.s. Add some fresh chilli for a kick or avocado for additional nom factor
